As Vaal said, cold would work better

Don't know how hot it is in your house, but if you let the cream sit (Diablo iii Gold), and the bowl it went into was warm, and the whipping attachment was warm, you may have just had it warm too much on you for whipping. I whip at a high speed, like a 9 on my knockoff KitchenAid, it's a SunBeam stand mixer I got as a gift, it does the job well enough though. Not counting doughs, lmao...

Anyway, whipping high shouldn't affect it at all.

The only other thing I can readily think of is that there was an acid left somewhere, but I can't imagine that escaping you in the end. It would have to come from somewhere, after all.
